I played field hockey at a high level in England, but after a bad knee injury
haven't played in a few years. I had lateral release on my right knee last year
and now after some time off want to get back playing, however have lost so much
muscle in my legs I'm afraid i wont get it back. have you got any suggestions on
building my leg and getting back to playing and any routines i could stick to
everyday?

Well, I think you need a certified physical therapist.  Post-surgery recovery is not something you should trust to laypeople.  I can offer you general advice (like take it slowly, lots of single-leg movements, but throw in two-leg movements too at light weight, yadda yadda) but I prefer not to get too detailed/speculative.  The good news is that with proper advice I think you'll be able to regain strength.  The release should not affect strength or muscle size but I can't comment on how it might affect your sport-specific performance.
